I have baked more than a hundred banana breads in my life, and this is the one I keep coming back to. It is moist in the middle, golden and slightly crisp on the edges, and it tastes of toffee and warm spice rather than just "sweet banana". The secret is two small things: brown butter and bananas that look almost too far gone.
Why this banana bread works
Most recipes use melted butter, which is fine. Browning it first takes five extra minutes and gives you a nutty, caramel flavor that makes people ask what you did differently. The milk solids toast in the pan, and that is where the flavor comes from.
The second trick is the bananas. You want skins that are heavily spotted or even fully black. As a banana ripens, its starch turns to sugar, so riper fruit means a sweeter, more fragrant loaf and a softer crumb.

Ingredient notes
- Bananas: three large or four small. Weigh them if you can: you want about 300 g of peeled fruit.
- Brown sugar: gives moisture and a light molasses flavor. White sugar works, but the loaf will be paler and less rich.
- Baking soda: reacts with the acid in the brown sugar and bananas to help the loaf rise. Do not swap it for baking powder one to one.
- Salt: do not skip it. It makes the banana and the brown butter taste more like themselves.

Tips for the best loaf
- Do not overmix. Stir the flour in until you cannot see dry streaks and then stop. Overmixing builds gluten and gives you a tough, rubbery loaf.
- Use a light-colored pan. Dark metal pans bake faster and can burn the crust before the center is done. If yours is dark, lower the oven by 10 degrees.
- Check with a skewer in the very center. A few moist crumbs are fine. Wet batter is not.
- Wait before slicing. Ten minutes in the pan, then cool on a rack. Slicing too early squashes the crumb.
If the top is browning too fast but the center is still wet, tent the loaf loosely with foil and keep baking.

Make it your own
Fold in a handful of chopped walnuts, dark chocolate chunks, or a swirl of peanut butter. For a bakery look, sprinkle the top with coarse sugar before baking. It forms a crunchy crust you will not want to stop picking at.
How to store it
Wrap the cooled loaf tightly and keep it at room temperature for up to 3 days. It is even better on day two, when the flavors have settled. For longer storage, slice it, wrap the slices individually and freeze for up to 3 months. A few seconds in the toaster brings a frozen slice back to life.

Instructions
- 1
Heat the oven to 175 °C (350 °F). Line a 23 x 13 cm loaf pan with parchment paper, leaving some overhang so you can lift the loaf out later.
- 2
Melt the butter in a light-colored pan over medium heat. Keep swirling it. After about 5 minutes it will foam, smell nutty and turn golden brown with toasty specks at the bottom. Pour it into a large bowl and let it cool for 5 minutes.
- 3
Mash the bananas in the same bowl with a fork. Whisk in the sugar, eggs and vanilla until smooth.

- 4
Add the flour, baking soda, salt and cinnamon. Fold with a spatula until just combined. A few small lumps are fine.
- 5
Pour the batter into the pan and smooth the top. Bake for 50 to 60 minutes, until a skewer in the center comes out with only a few moist crumbs.
- 6
Cool in the pan for 10 minutes, then lift out and cool completely on a rack before slicing.

Tips & notes
No brown butter? Plain melted butter works, but you will miss the toffee flavor. For extra tenderness, replace 2 tablespoons of the flour with plain yogurt.
Frequently asked questions
Can I use frozen bananas?
Yes. Thaw them completely at room temperature and use all the liquid that comes out, since it is full of sugar and flavor.
Why did my banana bread sink in the middle?
Almost always because it was underbaked or the oven door was opened too early. Check with a skewer in the very center and bake a few minutes longer if it comes out wet.
Can I make muffins instead?
Yes. Divide the batter between 12 lined muffin cups and bake at 190 °C (375 °F) for 18 to 22 minutes.
How ripe should the bananas be?
The spottier the better. Skins that are mostly brown or black give the sweetest, most fragrant loaf.
